Meet with Alexandre Faix
At the request of Baron Edmond de Rothschild, Alexandre Faix came to the Mont d' Arbois in 1995. Originally hired as the supervising chef, he gradually became manager of the whole range of facilities that make up the Mont d'Arbois Estate.
After a career that began at Fouquet's and continued with a stint at Albert & Michel Roux's Gavroche in London and a year at Joël Rebuchon's Jamin, Faix created "Fouquet's Europe" at the CNIT in Paris's Défense quarter. It was a tall order: 150 place settings, reception rooms big enough for 1500 guests, a fitness centre - clubhouse and a brasserie seating 400. Three years after opening, Alexandre Faix was marshalling a staff of 40 and had a clutch of awards to his credit: a Michelin star, three Eiffel Towers in the Lebey Guide and a 16/20 rating from Gault & Millau.
When Baron Edmond de Rothschild asked him to take charge of the Mont d'Arbois Chalet, Faix – then 30 – was instructed to make the restaurant a stand-out in the region. Having already achieved that goal, he is now devoting his considerable talent to running all the facilities that comprise the Mont d'Arbois Estate.
