Brie de Meaux
The production of Brie de Meaux, a soft cheese with an unwashed rind, is subject to A.O.C. (appellation d'origine contrôlée) restrictions. This primarily entails compliance with unbending specifications that include a clearly delineated geographical origin, as well as an obligation to hand-shape the wheels and use unpasteurised milk, giving the cheese a more distinctive flavour. 8000 metric tons of Brie de Meaux is produced each year.
Brie de Meaux Fermier may be made only on the farm, using the milk produced daily by the farm's own cattle.
It takes approximately 25 litres of milk to turn out a Brie de Meaux Fermier 36 cm in diameter weighing about 2.8 kg. After eight weeks of ageing, it has a fine rind dotted with orange spots and a smooth, pleasantly fragrant consistency.
At present, only the Trente Arpents Farm at Favières (Seine & Marne) produces Brie de Meaux Fermier.
